The Conscious Recipes

1. Slow Roasted Itallian Tomatoe Soup with Basil.
This vibrant soup has a satisfying, long-simmered taste, and it’s loaded with cancer-combating lycopene.

Ingredients
• 1 kg ripe Jam tomatoes
• 1 onion, cut into thin wedges
• 4 large cloves garlic, peeled
• 2 Tbs. chopped fresh basil and for garnish.
• 1 tsp. fresh thyme leaves
• 2 cups organic vegetable stock
• Rock Salt and freshly ground black pepper to taste
Method
Slow roast tomatoes, onions and garlic. Blend all ingredients until smooth. Serve with Lentil Papads (gluten free) or crusty bread.

2.Arugula, beet and sunflower salad.

Ingredients;
• 1 small bag of rocket
• 2 beetroots grated raw or roasted beetroot squares
• Handful of sunflower seeds.
• Swirl of olive oil.
Mindfully combine the arugula, beets and sunflower seeds to look and feel beautiful for you and your family. Serve with a swirl of olive oil and ground black pepper. Option to add shavings of pecorino cheese or even walnuts.

4.Whole wheat organic pasta with spinach pesto, ricotta, rosa tomatoes and black olives.
Spinach pesto ingredients
• 1 Bunch of Swiss Chard, chopped
• 1 Onion
• 4 cloves of garlic
• 1/3 cup of sunflower seeds
• Rosa tomatoes halved as your heart desires.
• ¼ Whole Nut Meg grated
• A slash of healing water to steam fry
• Juice of one lemon
• Black Pepper to taste
• Packed of black olives
• Olive oil to serve
Method
Sauté your onions and garlic in coconut oil, add spinach and a handful of healing water and lemon juice into the pan and cover. Reduce heat and allow spinach to steam when soft remove heat and add nutmeg, sunflower seeds and black pepper. Blend the steamed spinach into a pesto constancy, add raw rosa tomatoes and black olives.
Serve over al dente pasta, pasta which is cooked to perfection, firm but not hard with olive oil and black pepper as desired.

Optional addition Home-made natural ricotta cheese
Cheese making method to be experience in the 3rd module using only raw natural farm fresh milk.

5.Mango Mousse with banana puree.

Mousse ingredients;
• 2 Large Ripe Mangoes chopped
• 250g of whole dates, soaked in fresh mango juice.
• Squeeze of lemon juice.
• 1/3 cup of coconut oil.

Banana puree ingredients;
• 2 bananas
• 200mls of coconut milk (heated into liquid in a bain marie)
• Pinch of cinnamon or a few green cardamom seeds.
Method;
Mousse; blend mangoes, dates and lemon and lastly add liquid coconut oil. Allow it to set in the freezer and let it sit for 3 minutes before serving.
Puree;
Blend bananas, coconut milk and spice and serve over mousse in bowl or cocktail glass.

Over the course you will learn concepts of Integrative nutrition and explore different dietary theories to best suite your uniqueness. This course is intended to nourish and support you emotionally, physiologically, hormonally, and spiritually. The course will be set in Chrisna’s Eagles View sacred Yoga and Kitchen studio in Winston Park. Here is what Chrisna, wrote about Diego’s up coming Conscious Cooking Course;

Things are happening at Eagles View Studio over autumn. Take a breath of fresh air and be inspired to prepare foods that are delicious and sociable but at the same time healing and nurturing to our wellness and happiness.

We are going to be having Diego Baldi in our beautiful studio to host an incredible journey into reconnecting with food on a deeply fulfilling and healing level; Conscious Cooking Level I.

Diego is a member of the largest and most forward thinking nutritional institute in the world, Institute of Integrative Nutrition, he has tapped into the most cutting edge research and concepts in food and mind-body wellness. Also a certified Yoga and meditation instructor he has an ancient and divine insight into foods and their mystical healing properties. The good news is the course will be on a Sunday afternoon. We will learn inspirational and delicious recipes and food concepts to best serve you and your family. On the course you will participate in the creation of delicious soups, salads, entrees and desserts. Foods will be prepared and eaten in loving and conscious space allowing us to reconnect with the health and wellness quality of foods.

This delicious Conscious Cooking experience will be over 4 modules. Sunday afternoon 3-6PM;
